Recipe of the Month: Chicken Potjie

oil for frying

2 onions

8 Chicken Cuts Thighs & Drumsticks

500ml hot water

3 sweet potatoes
5 carrots
5 potatoes
250 ml. White wine, dry
2 teaspoons soy sauce
50gr. tomato pulp
2 tablespoons brown sugar (white sugar works too)
salt and pepper

 

Peel and dice the onions.
Die  Peel the sweet potatoes, carrots and potatoes and cut into thick slices

 

Now heat the oil in a pan and sauté the onions.
Add the chicken pieces and sauté until golden brown.
Add 250ml water and stir. Make sure the bottom is covered with liquid.
Place the vegetables and potatoes on the chicken pieces.
In a separate bowl, mix the remaining 250 ml. water, white wine, soy sauce, tomato paste and sugar and pour over the vegetables.
Cover and simmer until all ingredients are cooked. This can take between 1-2 hours.
Check the liquid frequently and add water if necessary.

Experts say you shouldn't stir a potjie.
But who listens to the experts?
